2.7 Fitsum Tigu Yifat, PhD
He received PhD in Microbiology (Industrial Microbiology and Biotechnology) via CAS-TWAS Fellowship Program from Institute of Microbiology, University of Chinese Academy of Sciences, China. Dr Fitsum served the Department of Biology, Addis Ababa University at various positions since 2009 and currently, he is an Assistant Professor of Microbiology and Biotechnology at Addis Ababa University, Department of Microbial, Cellular and Molecular Biology. Dr. Fitsum is a young and high caliber researcher of food and industrial microbiology and he has published several articles in international journals. His recent research focuses on development of mixed starter cultures from lactic acid bacteria (LAB) and yeast for the improvement of Ethiopian fermented foods, studying the probiotics properties of LAB and identifying their bacteriocin and enzyme for industrial application and optimization of fermentation conditions of traditional foods and beverages. Furthermore, he is interested in studying the fate of pathogenic microorganisms in raw foods, ready to eat foods, and fermented foods that cause public health problems.
