An assessment of technologies for processing cassava into <i>gari</i> in Southwestern Nigeria

Abstract

This study investigated the different processing methods adopted by gari producers in the southwestern states of Nigeria (viz; Ondo, Osun, Ekiti, Oyo and Ogun States). Multistage random sampling was used to select gari production centres to which a structured questionnaire was administered in the study area. Analysis of field survey data revealed (among others) that unit operations such as peeling, washing, sieving, frying (with fuelwood as the source of heat) and packaging are 100 % manual while per cent mechanization level for grating, dewatering, and pulverizing stood at 96.1, 85.0, and 44.5%, respectively. Appropriate technology profile consistent with high performance is hereby presented.
